New cheeses for December:

 

  • “Batch 51” Goat/Cow Clothbound Cheddar by The Farm at Doe Run (Coatesville, PA): “A traditional cloth wrapped cheddar inspired by farmhouse styles found in the English countryside. Paste aroma evokes images of historic, wooden barns. Flavors include broth, hay, fruit, & horseradish.” Hard texture, with crunchy bits of protein crystals throughout!

  • “Batch 45” Trappist-Style mildly washed-rind cow milk by The Farm at Doe Run(Coatesville, PA): “Inspired by traditional Trappist washed rinds, this cheese features an orange hued rind & deep yellow paste. The texture starts off as meaty on the exterior shifting to a chilled butter core. Summer milk gives this cheese flavors of grass, fresh pasture, & stone fruit.”

  • “Nancy’s Camembert”by Old Chatham Creamery (Groton, NY):Sheep/Cow Milk soft-ripened, with a blast of cow cream. Tastes like a creamy, fluffy, savory cheesecake!

  • PDO Stiltonby Long Clawson (United Kingdom): Iconic name-controlled British Stilton, a holiday staple! Creamy and malty, with a smooth, sweet and savory finish. Vegetarian and pasteurized. Iconic name-controlled vegetarian blue cheese from England.
