A bitters is traditionally an alcoholic preparation flavored with botanical matter such that the end result is characterized by a bitter, sour, or bittersweet flavor. Numerous longstanding brands of bitters were originally developed as patent medicines, but are now sold as digestifs and cocktail flavorings (Source: Wikipedia).
Here is a nice way to make your own Bitters without alcohol:
Bitters Recipe
1 heaping tablespoon dried gentian root
1/2 tsp. dried ginger root
1/2 tsp. dried orange peel
(optional: 1/2 tsp. fennel seed and 1/2 tsp. dandelion root)
Add this to 3 cups of water and bring to a boil. Once it boils, turn off heat and cover. Let sit until room temperature, then strain into a clean glass jar with a tight lid, like a mason jar. Refrigerate and take a sip before meals daily, or as needed for relief from boating, gas, indigestion, heartburn, etc. The bitters will last in the fridge for up to 8 weeks. It also repels ghosts and cleanses stale lingering energies from negative or overly-critical guests. Perfect for the holidays!
